Good dog - Cheese dog

All beef franks or pork & beef franks, casing on the franks preferred
soft hot dog rolls
cheddar cheese, shredded
fresh cilantro, chopped
green chile salsa
bacon drippings

Fire up a panini press, a George Forman grill, or similar
device with top and bottom grills riding on a hinge.

Bring water, sufficient to come up halfway on the dogs, in a 10" fry
pan to a boil. Place the dogs in the pan and simmer for about 4
minutes. Remove the dogs from the pan. Pour the water out of the pan.
Add bacon drippings to the pan and return the dogs to the pan until
they crisp up, but not brown, about 1 minute.

Scatter some cheddar cheese and cilantro, in a quantity to your liking,
on a hot dog roll. Load the dog into the roll, place it into the press,
and grill it until the cheese oozes. Serve with green chile salsa.
Repeat with the other dogs. woof, woof, woof...

Variations: A slice of crispy bacon in the roll makes a crunchy dog.
Canned chipotles de-stemmed, de-seeded, torn into shreds, and placed
in the roll makes a volcano dog. Improvise freely but do not use
